Caramelised Leek Un-Quiche

This is a fantastically easy downsizing alternative to quiche – perfect for brunch or lunch. I love leeks, especially when they are cooked down till they are dense and caramelised.

Ingredients
  • 3 large leeks
  • 250ml semi-skimmed milk
  • 2 large eggs
  • 2 teaspoons olive oil
  • A good grating of nutmeg
  • Salt and pepper
METHOD
  1. Preheat the oven to 200º / fan 180º gas mark 6.
  2. Wash the leeks and chop into ½ cm thick pieces.
  3. Put 2 teaspoons of oil into a shallow pan you can transfer into the oven.
  4. Add the leeks.
  5. Cook with the lid on until they start to soften.
  6. Remove the lid and turn the heat up a tad so they cook down, begin to caramelise, and the liquid evaporates.
  7. Put the milk, eggs, nutmeg, salt and pepper into a bowl and whisk really well.
  8. Pour it over the leeks, put it in the oven, and cook it for about 20 minutes until set and a little brown.

Diva notes.

I have to admit that this would taste better with lashings of double cream and butter, but so long as you cook down the leeks until they are dense and caramelised, it is pretty good.
