Mixing

Mixing is how flavours and seasoning get distributed, and starts them talking to each other.

Bowl Size

Use a larger bowl than the ingredients need so there’s plenty of  space to move things around.

Mix with your hands

Much more effective than using a spoon  –   it gets the flavours talking to each other and evenly distributed – and makes sure that everything is completely coated with oil  even if you aren’t using much.

Chilli

Chilli clings and burns. If using, mix everything else first with your hands, then add the chilli and mix with a SPOON.
